I just started a bible study at my church which meets each Monday at 9:30am. I am thrilled to finally be a part of this bible study because when I had a job…well…I couldn’t! So now I get to mingle with the other non-working (at least not at 9:30am) women of Atlanta to study the book of Daniel. We had a little ice breaker in our group and one of the questions was “What do you do for fun?” The old trusty hobbies first came to mind: cooking, reading, photography, travel…and then I remembered that those days are on hold at the moment and currently, I spend my free time taking a shower, unloading the dishwasher, feeding myself for once, and maybe even sleeping! My how quickly life has changed! However, I refuse to accept the fact that those days are OVER. As you can see, I am desperately holding onto my blog, and I even blow dried my hair this week one time! Maybe next week, I’ll go for twice. I appreciate what one blogger wrote recently (Cup of Jo- love!) about the early stages of motherhood which is that she tries to wash and blow dry her hair every morning to continue feeling like a woman. Cheers to that!
In the meantime, let’s go back to last Friday. A little reality check that since I am now a mom, I have permission to show up to a restaurant having not showered, wearing my sweaty walking clothes from that morning and my husband’s sunglasses because I couldn’t find mine, sporting a diaper bag for a purse, and to top it all off…left without paying the bill. Yep! (Don’t worry- I called them and took care of it. Relax.) So I’m learning..slowly but surely. I did go out to lunch after all, right!?
Last week, I made some granola, inspired by a yummy looking Instagram from my sweet friend Clare, who painted this gorgeous painting for our nursery especially for Evie. You can have one too! Check these out!
She has been posting her very own food porn on Instagram and I was inspired. After tasting some deliciously buttery granola from Whole Foods, I decided that coconut oil was for pansies and I just went for it. And it was delicious! Crunchy and crisp with little bits of coconut, pecans, and golden raisins- perfect colors for fall, and the perfect midnight snack
Buttery Maple Granola:
3 cups oats (I used a mixture of old fashioned and instant..because…well..that’s what was in my pantry)
1 stick melted butter
1/2 cup maple syrup
1/2 cup brown sugar
1/2 cup shredded sweetened coconut
1/2 cup golden raisins
1/3 cup chopped toasted pecans
1 tsp salt
1 tsp cinnamon
Combine syrup, sugar, cinnamon, salt and melted butter and whisk together. Add oats, coconut, raisins and pecans and stir so that all oats are coated evenly with the wet ingredients. Spread evenly on a baking sheet and place in a 325F oven for 30 minutes, stirring every 10 minutes. Let the granola completely cool to obtain its *crunch*.
